WIAW: lazy bones (chicken & veggie soup)

I am going to be honest with ya. I am exhausted. I am tired of work. I am tired of cleaning. I am just plain tired. So tired that my eyes are itching. (No, it’s not pink eye.)

When I am tired, I am lazy. All I want to do it sit on the couch and watch Ellen. She can turn any frown upside down. I just love her and wish I had her confidence and humorous bone.

Speaking of LAZY.. here are my foods recently for this week’s WIAW (thanks to Jenn). I haven’t been putting in any sort of effort.. but there is a yummy soup recipe 🙂

Snack: a bowl of peanut flour.. just like the one from breakfast.

I told you, I am BORING!

BUT…. this recipe is EASY and delicious. I make it at least twice a week in the winter time…

Homemade Chicken and Vegetable Soup

Ingredients:
-1 onion, diced
-1T garlic
-4 celery sticks
-4 carrots
-2 chicken breasts, diced
-6-10 cups chicken stock
-2 bay leaves
-black pepper (optional)

Directions:
1. In a large stock pot, sautee onion and garlic until onion is translucent.
2. While onion is cooking, chop celery and carrots.
3. Stir in veggies.
4. After veggies are starting to smell yummy (and become warm), stir in chicken.
5. Add in chicken stock. Stir.
6. Throw in bay leaves and sprinkle pepper. Let soup sit until it comes to a boil.
7. Turn heat down to low. Let sit 10 minutes (or until veggies are tender to your liking).

I promise you will like this recipe. Don’t forget to take out the bay leaves!

I hope you have been more active and upbeat than I have been…

My day started, as usual, at 5:15am when I got up and chugged some water. For reason I was parched! I changed outta my PJs, ate a carrot, shared a bit with Stan the Man, and was off to CrossFit!

Got home, showered my sweaty-betty self (shuttle runs got me), and made the protein shake I teased you all with on instagram on Monday.. hehe

Behold.. The Buttery Nipple Protein Shake!!!

I had to turn this alcoholic shot into a shake. It brings back ridiculous memories of my 21st birthday in Las Vegas. It was, after all, my first LEGAL shot!

In the shot comes Butterscotch Schnapps & Irish Cream. Healthy? No. Delicious? HECK YES!

The shake turns out sweet, creamy, and even has a hint of rum. hehe 😉 (recipe at the bottom)

The shake was consumed with a glass of Silk Almond Milk (yes, the sweetened kind-sometimes you just buy what’s on sale!), coffee, and 2 (or 3 or 4) tablespoons of Justin’s Almond Butter. Straight from the jar. Classy.

Lunch was a #strangebutgooddelicious mixture of shredded cabbage, low sodium turkey meat, and YELLOW MUSTARD!! The tangy mustard is like a party in my mouth. I swear, it’s like crack to me.

Sauteed cabbage with a chicken breast from a juicy & tasty rotisserie chicken from Sam’s Club. I was lazy and didn’t want to bake chicken, so we bought one. Don’t hate.

My last meal/snack of the day was gone in a flash. Kinda like Nicky Flash. (Tell me you have seen that commercial)..20130409-161043.jpg

Strawberry Protein Fluff made with cottage cheese. I die.

Buttery Nipple Protein Shake
-1 cup almond milk
-1 scoop vanilla protein powder
-1/4t butter extract
-1/4t rum extract
-1/4t vanilla extract
-7-10 ice cubes
-1/4t xantham gum

*Blend everything but the ice and xantham gum. Once mixed, add in remaining ingredients & enjoy!
–So yummy but don’t blame the rum-tasting burps you have for a few hours. 😉

Welp, it’s back to work for this girl… I thoroughly enjoyed my 2 weeks off. (Recap of my goals coming soon).. but I do love being back on schedule. My body even knows the schedule… I am quite regular, if ya know what I mean. 😉

Started off my day at 5:30am sharing my carrot with my fur baby. Sharing is caring, right?

After CrossFit, I was famished! We did a huge workout of:::

A descending ladder 10-9-8-7-6-5-4-3-2-1 of ManMakers*.. which I would like to refer to as (Wo)ManMakers. Thank you. Between each set, we had to run 200m. It was a rough one–but such a GREAT workout.

*ManMakers: Using dumb bells, do a pushup, row with one arm, push up, row the other arm, jump up, feet together, overhead press.

At 7:50, I enjoyed my usual coffee with Silk Almond Milk & cinnamon, a Fuji apple, and a side of 2 tablespoons of peanut flour..

In case you missed it on instagram the other day, Silk featured my picture! On Monday, they reposted my pic and asked if anyone needed an afternoon pick-me-up? hehe.. I was honored to have them post my pic!

Along with breakfast, I had a FAILED Cookie Dough Protein Shake. FYI:: It should not be green, but once I tasted it and realized I need to tweak the recipe more, I threw some spinach into it. Hopefully I will get this recipe down soon!

By 8am, I was on number 3 of this Trenta-sized bottle of agua..

While eating breakfast, I found this fact in the Union Tribune San Diego.. Thought it was interesting & disgusting, at the same tie. The Major League speed-eating for pepperoni pizza (with cheese) is 252 slices in 6 minutes. SERIOUSLY?!? To me, that is insane.

My favorite part is the last sentence of:: “Warning: Most of these records are held by professional eaters; the rest by people who should find something better to do.” Amen.

Lunch came quickly at 11:45 and I thoroughly enjoyed this sweet combo..20130402-121803.jpg

Whole Wheat bread, Laughing Cow Light Swiss Cheese, and Strawberries– kinda like a strawberry cheesecake at noon! (p.s.. I had 2 pieces of bread and 3 strawberries with one cheese.)

I made a new recipe for dinner (6:45) featuring Laughing Cow! It involved chicken, the yummy cheese, and sun-dried tomatoes. Recipe will be posted tomorrow!My night time snack (8:00) comes quickly, but no matter what–I always want it.. I crave the sweets. To keep with my laughing cow themed day, I had a laughing cow on a banana. It was a delicious balance of sweet and creamy.

WIAW: weekend edition

I have a confession to make.

I am not always as healthy as I come off as…

I know, I know.. but I am human. Everything in moderation, right?

This week’s What I Ate Wednesday is full of gluttony..

This past Saturday was a day complete with beer, chips, more beer, peanuts, and even a Snickers bar.

Don’t hate.

So, Saturday morning started off great! I woke up happy and started off on the right foot with two eggs, cabbage, an apple, coffee, and sweet potato hash. YUM.

The BF even wanted to show off his breakfast.. He even set it up and took his own pic–making sure to get the Chargers cup in the back.

He had coffee, a banana, and a crunchy PB and grape jelly waffle-wich. (too cute).

Lunch rolled around, and the bad food blogger in me, and I totally forgot to snap a pic. I had a healthy lunch though–chicken and cabbage salad with dijon mustard. Nothing exciting…

Then, it happened. Everything went down hill.

At this point, I was still making “okay” decisions. Since it was time for dinner, I ordered the BBQ Chicken Salad (no BBQ sauce or dressing–it’s a super good salad). It comes with chicken, avocado, tomato, onion, cucumber, and mozzarella cheese.

*The drunchies (drunk + munchies) have obviously set in.. and I continue with a small bowl of peanut flour, sliced banana, and a scoop of crunchy peanut butter.

Waking up Sunday, I was feeling under the weather (to say the least)… What better way to clean up my act than with a CHOBANI. The banana flavor is fabulous.

I cleaned up my eating throughout the day–and ended on a FABULOUSLY DELICIOUS note with this gem from Laura.

It’s her Microwave Protein Carrot Cake.. and, needless to say, I will make this again. I topped mine with a mixture of cottage cheese and sugar free maple syrup.

So, there ya have it. I am human and not some robot who eats healthy 100% of the time. However, I am still paying for my decisions. BUT–did I have fun? YOU BET. Would I do it over? HECK YES.

Wednesday already?? Time flies when you’re having fun…

AKA St. Patty’s weekend full of friends & goodies!

This WIAW is a Spring Break edition because I am home and off of work. Just because I am not at work, I still try my best to stick to a schedule. (I even wake up at 5:30 to go to CrossFit!!) Call me crazy, but if I sleep in everyday, I would feel like a lazy bum!

Alarm went off bright and early–filled up my water bottle and grabbed a paleo Healthy Bite that I made.. ate it in my car. YUM.

At CrossFit, I always drink 2 Starbuck’s Trenta size water bottles. I drink one during the class/workout and refill for the ride home. Seems like a lot, but I need to get things moving (if ya know what I mean!)..

It was our front desk attendant’s birthday (Happy Birthday, Laura!!) and our fabulous trainer, Taysia, made Paleo Brownies (with sweet potato). I grabbed one for later & fully intend on making a version, soon.

When I got back home (~8am), made some coffee and was starved! I made an extra large protein shake this morning. It hit the spot! (recipe to follow) 🙂

My tummy started growling around 11:15, but I had some errands to run. I was excited because I knew it was time to try one of my Questbars. I had half of the Cinnamon Bun.

Verdict? It was good… There was not a big cinnamon flavor like I was expecting. It was sweet (maybe like cinnamon bun icing??) with a hint of cinnamon. I am looking forward to the others in the upcoming days.

When I got back from getting a new watch battery (one of my Spring Break goals!!!!), I was hungry. Lunch was a nice balance of veggies, chicken, and a quarter of a sweet potato.

My family can attest to the fact that I have a slight obsession.

3/4 chicken breast with a side of cabbage, broccoli, and mushrooms.. topped with red pepper flakes–mm mm good!

Night time snack was an oldie but a goodie!  Blueberry Protein Fluff–served atop a rice cake.  A delicious way to end the night..

Nutty-cocoa-nana Protein Shake
-1 cup almond milk
-1T peanut flour (use MLS308 to save $$$)
-1 scoop chocolate protein powder
-1T cocoa powder
-1/2 banana
-1t vanilla extract
-6 ice cubes
-1/2t guar gum
-1 handful of spinach (opt)–recommended!!

*Blend ‘er up and stick in the freezer to chill.

Breakfast:: I made my Cake Batter Protein Shake and added SPINACH!

Check out that GREEN color.. It was quite spectacular.. the green spoon definitely added some flair.

Adding spinach is strange.. but I swear ya can’t taste it.  It is an EASY way to add greens to a meal that would otherwise not have any.

Lunch rollllllllled in… and I had a GREEN PEAR and GREEN CABBAGE with chicken & hummus…

How about a little CHOBANI for a snacky-poo?  I had the (GREEN-labeled) Apple & Cinnamon flavor.. I loved it!  I even added a little more cinnamon.. be honest, what food blogger doesn’t have a serious relationship with cinnamon?!? We can’t get enough of it..

For snack.. Sadly, I didn’t have anything green!  I did have some Healthy Bites though 🙂

Dinner was some precooked chicken with a tomato sauce that I doctored up with sauteed mushrooms, red pepper flakes, SPINACH, and BASIL!

Hey, basil is GREEN! .. and adds GREAT flavor.

How-To Chop Basil Leaves:::

4. You have nice little ribbons.. OR you can run the knife through once more (the other direction) to get smaller pieces.

**Basil is a great addition to many dishes.  I especially like it with tomato-y things!

WIAW: start of national nutrition month

HAPPY NATIONAL NUTRITION MONTH!

Yes, believe it or not, it is already March! Almost a quarter of the way through 2013.. yikes. Time flies fast when you’re having fun, I guess.

It’s Wednesday and that means it is WHAT I ATE WEDNESDAY here at full’n’fit (FnF).

For the month of March, WIAW will be “going green.” All link-ups will be showcasing how to add more fruits and veggies into your diet. After all, St. Patty’s Day is full of GREEN and it’s National Nutrition Month.

My first snack was at 5:30am. Yes, I am crazy enough to attend CrossFit Eat Village‘s 6am class. I WOULD NOT HAVE IT ANY OTHER WAY! Those kids rock. I ate my last (tear) Paleo Muddy Buddy Mocha Healthy Bite. It was delicious and gave me the energy I needed to do 21-15-9 Overhead Squats and Box Jumps for the WOD.

After a steamy shower, it was time for breakfast and my daily dose of the newspaper. I had my coffee with Vanilla almond milk..

My coffee was accompanied by a lovely Mint Chocolate Protein Shake.. You may be wondering, “Where is the green, Haley?” WELL…. there is SPINACH in the shake. A huge handful of it… (I am working on the correct measurements for the shake & the recipe will be out soon!) Adding in spinach to the shakes and smoothies is an EASY way to get in more veggies.

If you follow me on Instagram (hlymre) or facebook (Haley Hawthorne), then you saw this comic. I found it hilarious! It is me and The BF to a tee! The girl is blabbing away.. and then asks the guy how his day was… his only response, “Like yours, but with less detail.” Too funny…

Lunch rolled around at 11:45… and I had so kindly packed myself a cabbage salad (VEGGIE!!) with turkey sandwich meat, red pepper flakes, and dijon mustard. Again, I am #strangebutgood.

…with a side of bloobs (FRUIT!!) that started out frozen in the a.m. and thawed out nicely by lunchtime.

I ended the day with a snack/dessert of Chobani and chia seeds.. Just a Chobani with a tablespoon of Chia–put it in the freezer for 10 minutes and enjoy! No picture taken.. I just simply enjoyed it.
