Mint Chocolate Chip Protein Shake

I scream.
You scream.
We all scream for ICE CREAM (for breakfast).

Who wants ice cream for breakfast? EVERYONE.

I have solved the world’s problem…AND it has over 30 grams of protein!


Mint Chocolate Chip Protein Shake
-1 cup almond milk
-1/2 cup cottage cheese (I use lowfat)
-handful of spinach (optional–but get in your greens, people!!)
-1 scoop chocolate protein powder
-1T cocoa powder
-1/2t mint extract
-1/2t vanilla extract
-6 ice cubes
-1/2t guar gum (opt-thickening)
-7 dark chocolate chips + 3 for topping

1.Put milk, cottage cheese,spinach, protein, cocoa, mint, and vanilla in the blender. Turn on high.
2. Blend until spinach is fully chopped.
3. Add in guar gum and ice. Blend until ice is chopped.
4. Blend some more. (I blend like crazy..it adds fluffiness.)
5. Throw in 7 dark chocolate chips. Blend until they are broken down.
6. Pour into a glass & freeze to chill.
7. Top with 3 more chips (trust me).


As you can see, you will lose the chocolate chips…


And throughout your yummy journey, you will stumble upon a few stragglers…


But the destination is the BEST… Remember the lost chips?  You meet up with them again…


And all is right in the world.

Go make yourself some ice cream for breakfast.  I give you my permission.

Strange but Good: Cheezy-Eggy Oats

I was lying in bed on Monday night.. and had a vision.  A vision of cheesy oatmeal goodness with a runny egg full of #yolkporn.


So, Tuesday morning I wake up and the recipe pulls itself together.

I have only ever made sweet oatmeal, so making a SAVORY was almost out of my league.

I went with the flow…and was delighted!!

Adding vegetables to oatmeal? STRANGE.

Adding salt and pepper to oatmeal? STRANGE.

Adding nutritional yeast to oatmeal? STRANGE.

Putting an egg on top of oatmeal? STRANGE.

All of this together? GOOD!

  • 1/3 – 1/2 cup oatmeal
  • 1 cup water
  • salt/pepper
  • leftover coleslaw cabbage & broccoli (any veggies would work)
  • 1 T nutritional yeast
  • 1/2 cup egg whites
  • 1 egg


    what ya need… minus oats, water

How To:

  1. Start boiling oatmeal.  (I used slightly less than a half of a cup because I was adding in so many extras).
  2. Sprinkle in salt and pepper to add flavor to the oats.
  3. Once oats have started to plump, stir in veggies.
  4. Once cabbage has wilted & warmed, stir in nutritional yeast.
  5. Stream in egg whites while stirring to prevent clumps.
  6. Meanwhile, cook egg sunnyside up (or personal choice)..
  7. Oats done? Serve ’em up with egg on top.
  8. EAT: you will not be disappointed!!

Seriously people.. if anyone is out there, get to it!  The oatmeal was satisfying and kept me full until lunch with the healthy fat, fiber, and protein.  Enjoy!
