Before I started blogging, I would read everyone’s What I Ate Wednesday (WIAW) posts.. I loved seeing what was for breakfast at Heather’s or what Laura was making for dinner that day… So, I decided to join the linkup and show you all what I had while I was home sick on Tuesday…

Considering I am feeling under the weather, the first thing I did upon waking up at 8:30 (silver lining to being sick=sleep) was chug water and take two headache blasters.
When I woke up, I knew I had felt better than the day before, but I was still talking with a sexy stuffed nose voice (you all know what I mean), had a splitting headache, and was running on no energy.
My next stop was the kitchen to mix up something warm
and tasty. Who am I kidding? I couldn’t taste a thing.. I knew I wanted oatmeal, so I made my French Toast Oats (recipe at the bottom) with a side of peanut flour and a Fuji.
After leaving the kitchen table, I plopped on the couch to catch up on The Bachelor from last night. Stanley was not enthused. He takes after The BF when it comes to hating that show… I adore it. It is embarrassing to admit I watch it. It is just too good to look away. Like a car accident–ya know?
Around noon, I thought I should spruce up my vitamin intake to boost my immune system.. Little late, eh? We had some Airborne on hand from the last time The BF was sick.
Doesn’t it just look so much fancier in a wine glass? In fact, I think I felt better immediately…
Lunch time was approaching, but I was not hungry… However, I knew I needed to eat to keep fighting off whatever is attacking me inside. I made an easy homemade soup with chicken broth, frozen veggies, fresh broccoli, and coleslaw cabbage. It was pretty uneventful but it got fluids in me.
Snacking was not on my mind today. I did munch on a couple carrots… but my appetite is pretty much MIA.
Dinner looks much like lunch, however I put a little more effort into it. I made my favorite homemade soup that is so creatively named Chicken & Veggie Soup.
It consisted of chicken (shocker!!), carrots, onions, celery, and garlic. All cooked up in chicken broth.. delicioso whether you are sick or not.
Then, this happened.
Sorry I’m not sorry for eating unclean.. Sometimes ya gotta squash the craving.
I got No Sugar Yo Frappe topped with Chocolate froyo and yogurt chips.
mmm mmm good.
French Toast Oats
What You Need:
-1/2 cup oats
-1 to 1 1/2 cups water
-1/4 to 1/2 cup egg whites
1. Boil the water and add in the oats.
2. Add in vanilla once oats begin to plump and stir.
3. Mix in cinnamon.
4. Stream in egg whites and stir constantly to prevent clumps.
5. Continue stirring to make sure the eggwhites are cooked thoroughly.
6. Transfer to serving bowl and stir in a tablespoon of SF syrup.
7. Top off with more cinnamon and a drizzle of syrup.
